Bangin’ Blueberry Chicken Pesto Patties
with buckwheat and scallions
Ingredients
- 1 lb. lean ground chicken breast
- 4 scallions, chopped
- 1 cup buckwheat, cooked
- 3 Tbsp. Pestos with Panache Bangin’ Blueberry Pesto, plus more for dipping
- Dash of sea salt
- Dash of freshly ground white pepper
- 2 ½ Tbsp. olive oil
- Optional Toppings: Whole Grain buns, arugula, fresh tomato slices
Directions
In a large bowl, combine ground chicken, scallions, cooked buckwheat, pesto, sea salt and pepper; mix well using hands.
Form into patties approximately 2 inches in diameter and ½ inch thick.
Heat oil in a large skillet over medium heat. Add a patty to skillet; cook on each side for 5 minutes or until golden brown and chicken is fully cooked in the center.
Serve atop whole grain buns with arugula, tomato and an additional dollop of pesto.
