Decadent Dark Chocolate & Ancho Chile Pesto
A trip to Cabo San Lucas, jutting out into the azure Pacific Ocean at the tip of Baja California, Mexico, inspired me to create a pesto combining the flavors of Mexican and Mediterranean cuisine that I savored there. Decadent Dark Chocolate & Ancho Chile Pesto marries some of the New World’s flavors—70% dark chocolate, ancho chilies, clove and vanilla—with the Old World’s fresh basil Genovese pesto. Hovering in the background is just a touch of smoky cumin to form a truly complex flavor.
Grilled meats, vegetables, chicken, seafood and chorizo bask in the warm glow of this robust pesto. Try mixing it into paella. ¡Sabrosisima! Hearty, rich, warm and decadent. A bit sinful on its own, but when paired with a robust red wine or an icy Mexican beer, heavenly! (Be sure to wear lots of sunscreen and a broad- brimmed hat.)
