Fabulous Fig & Gorgonzola Pesto Panini
with Pancetta, Arugula, and asiago cheese on rustic Italian bread
- 8 slices of rustic Italian bread
- 3 tablespoons of butter, softened
- ½ container of Fabulous Fig & Gorgonzola Pesto
- ¼ cup of shredded asiago cheese
- 1 cup of baby arugula
- 8 slices of pancetta
Preheat Panini maker. Generously spread Fabulous Fig & Gorgonzola Pesto on one side of each piece of bread. Make sandwiches with asiago cheese, arugula, and one piece of pancetta on each slice of bread. Spread softened butter on outsides of sandwiches and press, two at a time.
If you do not have a Panini maker you may substitute with a grill pan or skillet and press and hold sandwiches with
another heavy skillet.
