Fabulous Fig & Gorgonzola Pesto Stuffed Acorn Squash

with ground turkey and sweet onions

Ingredients

Directions

Preheat oven to 350 degrees.

Spray a baking pan with nonstick cooking spray.

Halve squash; discard seeds.

Place squash, cut sides down, in prepared baking pan; bake for 45-60 minutes or until tender.

In the meantime, to make the stuffing, combine ground turkey, onion, carrot, parsnip, tomato, sea salt and pepper; cook until turkey is fully cooked and vegetables are tender.

Stir in pesto and whole grain bread cubes; gently mix.

Remove squash from the oven and turn cut sides up in the same baking pan.

Spoon turkey stuffing into squash halves.

Return to the oven; bake for an additional 20-25 minutes.

Serve warm.
