Prosciutto & Smoked Almond Pesto with Angel Hair Pasta & Shrimp

Ingredients:

Directions:

  1. Peel and devein shrimp. (While you are doing this boil large pot of water for pasta and cook al dente…about 5 minutes. Drain pasta and rinse with cool water then set aside)
  2. In sauté pan, cover bottom of pan with olive oil.
  3. Add red & green peppers, onion, garlic, & black pepper, then sauté about 5 minutes on medium heat.
  4. Add shrimp, Proscuitto & Smoked Almond Pesto, white wine, and black pepper.
  5. Cook shrimp for 4-5 minutes and cover, turn heat off….then let sit for 5 minutes.
  6. Remove cover, add pasta and plum tomatoes to shrimp in pan, toss together lightly, transfer to heated dish, and garnish with chopped parsley.
