Prosciutto & Smoked Almond Pesto with Angel Hair Pasta & Shrimp
with garlic and white wine
Ingredients:
- 16-20 pieces of 16/20ct. shrimp
- 1 container of Prosciutto & Smoked Almond Pesto (thawed or refrigerated)
- chopped green pepper
- chopped red bell pepper
- chopped onion
- diced plum tomatoes
- cooked angel hair pasta
- ½ cup of olive oil
- 1 clove of minced fresh ground garlic
- 1 shot white wine
- fresh chopped parsley
- pinch black pepper
Directions:
- Peel and devein shrimp. (While you are doing this boil large pot of water for pasta and cook al dente…about 5 minutes. Drain pasta and rinse with cool water then set aside)
- In sauté pan, cover bottom of pan with olive oil.
- Add red & green peppers, onion, garlic, & black pepper, then sauté about 5 minutes on medium heat.
- Add shrimp, Proscuitto & Smoked Almond Pesto, white wine, and black pepper.
- Cook shrimp for 4-5 minutes and cover, turn heat off….then let sit for 5 minutes.
- Remove cover, add pasta and plum tomatoes to shrimp in pan, toss together lightly, transfer to heated dish, and garnish with chopped parsley.
