Proscuitto & Smoked Almond Pesto with Fresh Mozzarella & Tomatoes
Ingredients:
- 1 container of Proscuitto & Smoked Almond Pesto
- 1/2 pound fresh mozzarella cheese, drained
- 2 large red tomatoes, sliced
- 2 large yellow tomatoes
- 1/2 teaspoon salt
- 3 tablespoons extra-virgin olive oil
- Freshly ground pepper
- Garnish: fresh basil sprig
Preparation:
Slice cheese in 1/4-inch slices. Alternate tomato and cheese slices on a platter while spreading the pesto on each slice and sprinkle with salt. Drizzle with olive oil. Cover and chill 2 hours. Just before serving, sprinkle with freshly ground pepper. Top with a sprig of basil.
